My homemade tomato basil soup...it was so yummy!!!
Ingredients:
5 roman tomatoes (or 2 8oz can Diced Tomatoes)
2 tbsp basil finely chopped
1 cup chicken broth or stock (can substitute and use veggie stock)
1/2 cup of heavy cream
1 yellow onion
1 clove garlic minced
Olive oil for sautee
Directions:
Heat stock pot and drizzle olive oil to cover bottom of pan. Chop up onions and garlic and add to pan. Sautee until golden brown. Chop up tomatoes and basil and add to onion mixture. Add in the cream and stock to the mixture and let simmer for about 15-20 minutes till the mixture looks like below.

Pour small amounts of soup into blender or food processor to puree the soup. Puree gets all the clumps out of the soup from the basil and tomatoes. You make eat it hearty if you like, but I prefer my pureed.
In my cast iron skillet I made none other than a Grilled Cheese sandwich with Mozzarella. I drizzled some Olive Oil in the skillet and on top of each side of the bread. Then pan fried until golden brown.
Finished product..yum yum
