Tasty Tuesday: Homemade Salsa & Oven fried Chips

Super Bowl Sunday is February 6, 2011 and I know you are wondering what to eat on this 50 day fast.  I will assure you it is not going to be that bad.  I have two refreshing appetizers that will help your appetite before the main course, the Super Bowl commercials. 



Spicy Tomato Salsa Recipe


Ingredients
  • 4 medium tomatoes, halved
  • 1/2 cup fresh cilantro leaves
  • 1 garlic clove, crushed
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh orange juice
  • 1/2 teaspoon red pepper flakes
  • Kosher salt and freshly ground black pepper
  • Serving suggestion: tortilla chips

Directions

Put the tomatoes, cilantro, garlic, olive oil, orange juice, and red pepper flakes in a food processor. Pulse until the ingredients are combined but still chunky. Season with salt and pepper, to taste. Transfer to a small bowl and serve with tortilla chips.




Oven-fried Potato Chips Recipe

Ingredients

4 russet (baking) potatoes, peeled and sliced diagonally 1/8 inch thickdrizzle of Olive OilCoarse salt to taste

Directions

Pat the potatoes dry between paper towels and arrange them in one layer in 2 buttered cookie sheets pans. Brush the potatoes with the butter, bake them in a preheated 500°F oven for 15 to 20 minutes, or until the edges are golden brown. Sprinkle them with the salt.
