Tasty Tuesday: Homemade Vegetable Soup


Crock Pot with Vegetable Soup
Its Tasty Tuesday and tonight for dinner I have already preped and put in a Crock Pot before I left for work.  The soup will be completely done and cooked by the time I get home.

Here are the ingredients:

1 or 2 cans of stewed tomatoes

3 plus large green onions

1 large can of vegetable broth or chicken broth(no fat)

1 pkg. Lipton Soup mix (chicken noodle)

1 bunch of celery

2 cans green beans

2 lbs. Carrots

2 Green Peppers
 
Salt and Pepper for taste
 
A substitute for ingredients is to buy already frozen packages of mixed vegetables and onions, celery, green pepper mix.  Look in your local grocery store frozen vegetable section you may be surprised what's already frozen for you to grab.  Season with salt, pepper curry, parsley, if desired, or bouillon, hot or Worcestershire sauce. Cut veggies in small to medium pieces. Cover with water. Boil fast for 10 minutes. Reduce to simmer and continue to cook until vegetables are tender.  This is if cooking on the stove.  If cooking in the crockpot like what I did above.  Put all vegetables into the crockpot, cover with vegetable or chicken broth, stir and cover pot.  Cook on low if you have prepared the soup in advance otherwise cook on high.  Season with salt and pepper to your desire.  Serve with oster crackers or wheat thins.
