1 lb boneless skinless chicken tenderloins
1 shallot
1 green pepper
1 clove garlic
1 red onion
Salt and Pepper for seasoning
2 jalepeno peppers
3 roman tomatoes
Tortilla chips
sour cream
sharp cheddar cheese
salsa (hot, med, mild whatever you like)
Directions:
Chop up green pepper, shallot, red onion, and garlic and saltee in skillet with olive oil. Cook until tender. Season tenderloins with salt and pepper add to skillet and cook until white and tender in middle. Chop jalepeno peppers and roman tomatoes. Add tortilla chips to plate add jalepenos and tomatoes. Top with chicken/onion mixture and add cheese and sour cream. Serve with salsa on the side. Enjoy!
