I remixed an old Tilapia Boat meal by adding more veggies and Saffron Yellow Rice.
Ingredients:
3 Fillet Tilapia
1 Yellow Onion
1 Green Pepper
1 Red Pepper
1 Yellow Pepper
1 Orange Pepper
Salt and pepper for seasoning
Olive Oil
Parchment Paper or Foil
Yellow Rice (Saffron Rice)
Directions:
Preheat oven to 400F. Season both sides of Tilapia with salt and pepper. Place Tilapia in middle of parchment paper. Cover with onions, peppers, and green beans. Season more if needed with salt and pepper. Add drizzle of Olive Oil to veggies and fish. Wrap Tilapia up like a boat by folding parchment paper up to make a steam bag. Cook the veggies and tilapia until tender and fish is white in color for about 20-30 minutes. Cook the Yellow Rice as it says on the package for about 20 minutes until all the water has been absorbed.
